Vanilla Extract

This makes about a 2x concentration compared to store-bought, as near as I can tell.

Ingredients

  • 28 grams vanilla beans
  • 1 c vodka

Instructions

  1. Cup beans lengthwise. Scrape out the caviar. Chop the skins into pieces 1" or shorter. Sterilize the bottle. Fill with skins and caviar. Fill with vodka. Shake.
  2. Week 1--shake daily.
  3. Weeks 2-4--shake a few times a week.
  4. Week 5--usable.
  5. Months 2-6--shake when you feel like it.
  6. Filter extract and re-bottle.
