Sourdough Banana Bread

An excellent way to use excess starter, this is the moistest, richest quick bread I've ever made.

Ingredients

  • 64 g shortening
  • 250 g sugar
  • 1 egg
  • 250 g all purpose flour
  • 5 g baking powder
  • 3 g baking soda
  • 6 g salt
  • 1 c mashed banana
  • 255 g sourdough starter
  • 3/4 c chopped walnuts
  • 1 tsp vanilla or
  • 1 tsp grated orange rind

Instructions

  1. Cream together the shortening and sugar, add egg, and mix until blended.
  2. Stir in bananas and sourdough starter. Add orange rind or vanilla.
  3. Sift flour, measure again with salt, baking powder, and soda.
  4. Add flour mixture and walnuts to the first mixture, stirring just until blended.
  5. Pour into greased 9x5" loaf pan.
  6. Bake in moderate or 350° oven for 1 hour or until toothpick comes out clean. Cool before slicing.

Variations

  1. substitute any other fruit. Very ripe persimmons are especially nice.
