Peanut Butter Cookies

Chewy, slightly crumbly, slightly salty cookies. Works best with smooth peanut butter but chunky will do.

Ingredients

  • 200 g light brown sugar
  • 195 g peanut butter
  • 57 g earth balance
  • 52 g shortening
  • 1 egg
  • 1 tsp vanilla
  • 156 g all purpose flour
  • 4 g baking soda
  • 4 g salt

Instructions

  1. Preheat oven to 375°.
  2. Mix sugar, peanut butter, and fats until smooth.
  3. Add egg replacer and vanilla and mix again. Add other ingredients and mix to combine.
  4. Drop rounded tablespoonfuls onto a baking sheet. Flatten and imprint with crossed forks.
  5. Bake for 8 to 10 minutes. Let cool on the sheet for several minutes to harden.
