Biscuits

Quick, tasty biscuits. Not as good as sourdough but easier to whip up in a hurry (and still plenty good).

Ingredients

  • 2 c all purpose flour
  • 4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsp earth balance
  • 2 tbsp shortening
  • 1 c milk

Instructions

  1. Preheat oven to 450°.
  2. Cut 2 tbs of veggie shortening & 2 tbs of earth balance into the flour mixture until small crumbs form, do this fast. i opted for a fork and spoon to cut into the flour (fingers=heat and you don't want the fats melting), if you feel like the fats are melting, throw the entire bowl into the fridge for a bit before moving on.
  3. Slowly add 1 cup of whatever vegan milk you'd like until the mixture just comes together, do not over work the dough. it'll be a bit sticky. if it's too crumbly or dry, add more milk a tsp at a time.
  4. When you can handle the dough, throw onto a floured surface and fold 5-6 times, no real kneading should happen, just flattening and folding.
  5. After final fold, flatten to your desired size (i kept it to just under an inch or so thick) and cut with a biscuit cutter or sharp knife. (i used a knife) the cut should be clean, if not, the sides get pinned down and the biscuits don't spring up.
  6. Bake for 15-20 min (mine took just about 15) until golden brown on top
