Biscuits
Ingredients
- 2 c all purpose flour
- 4 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 2 tbsp earth balance
- 2 tbsp shortening
- 1 c milk
Instructions
- Preheat oven to 450°.
- Cut 2 tbs of veggie shortening & 2 tbs of earth balance into the flour mixture until small crumbs form, do this fast. i opted for a fork and spoon to cut into the flour (fingers=heat and you don't want the fats melting), if you feel like the fats are melting, throw the entire bowl into the fridge for a bit before moving on.
- Slowly add 1 cup of whatever vegan milk you'd like until the mixture just comes together, do not over work the dough. it'll be a bit sticky. if it's too crumbly or dry, add more milk a tsp at a time.
- When you can handle the dough, throw onto a floured surface and fold 5-6 times, no real kneading should happen, just flattening and folding.
- After final fold, flatten to your desired size (i kept it to just under an inch or so thick) and cut with a biscuit cutter or sharp knife. (i used a knife) the cut should be clean, if not, the sides get pinned down and the biscuits don't spring up.
- Bake for 15-20 min (mine took just about 15) until golden brown on top
